Banana and Coconut Cake

  • 3 ripe bananas
  • 1 teaspoon each ground ginger, allspice and nutmeg
  • 1 teaspoon vanilla essence
  • 1/2 cup vegetable oil
  • 1/3 cup raw sugar
  • 2 cups self raising flour
  • 1 teaspoon bicarb
  • 1/2 cup soy milk
  • 1 tablespoon vinegar

  • 30g Nuttelex
  • 1 cup icing sugar
  • hot water
  • 1 teaspoon vanilla essence
  • 3 tablespoons desiccated coconut


  1. In a large bowl, mash the bananas. Stir in the spices, essence and oil.
  2. Add the sugar, bicarb and flour and mix well.
  3. Add the soy milk to make a smooth batter. Stir through the vinegar.
  4. Pour batter into a greased and floured tin and bake in a 180 degree oven for about 30 minutes or until brown and cooked.
  5. When cooled, mix together the Nuttelex, icing sugar and vanilla essence to make a thick frosting. A little hot water may be added to help mix. Spread roughly on top of cake and sprinkle coconut on top.
