Carrot and Lentil Curry

Ingredients

  • 2-3 large carrots
  • 1 large zucchini
  • 1/3 cup dried red lentils
  • 1 can (400g) of chickpeas
  • 1 large onion
  • olive oil
  • 1 clove garlic
  • 1 teaspoon garam masala
  • 1 teaspoon cumin
  • 1 teaspoon curry powder
  • 1 tablespoon brinjal relish
  • 1 teaspoon vegetable stock powder
  • 4 cups boiling water

Method

  1. Cut up the vegetables into chunky pieces.
  2. Heat oil in a medium saucepan. Add onion, garlic, spices and relish and cook for 2 minutes.
  3. Add vegetables, lentils, stock and enough boiling water to just cover the vegetables (3-4 cups).
  4. Bring to a boil and simmer for 20 minutes.
  5. Add drained chickpeas and cook for a further 10 minutes.
  6. Serve with brown rice and pappadums. (Serves 3-4).
