Cashew Nut Loaf

Ingredients

  • 3 tablespoons oil
  • 3 cloves garlic
  • 2 medium onions
  • 250g mushrooms
  • 1 1/2 cup wholewheat flour
  • 1 1/4 cup rolled oats
  • 3 tablespoons soya flour
  • 5 tablespoons soy sauce
  • 1 1/4 cup warm water
  • 1 large red capsicum
  • 2 cup raw cashews
  • 2 tablespoons mixed herbs
  • pepper to taste

Method

  1. Saute the chopped garlic and onion in the oil until onion is transluscent.
  2. Add chopped mushrooms and saute until brown.
  3. In a large bowl add the flours, oats, and add the onion, garlic and mushrooms.
  4. Add the soy sauce and water and mix.
  5. Add the chopped capsicum, cashews and seasoning and mix well until all combined.
  6. Place in 2 floured loaf tins and bake in a 160 degree oven for 1 hour.
  7. Then, turn loaf tins on their side and bake for another 1 1/2 hours.
  8. Serve warm or cold slices with parsley and tomato sauce.
