Fattoush (Palestinian Traditional Salad)

- 1 lebanese cucumber
- 1 ripe tomato
- 1/2 bunch parsley
- salt and pepper
- 1 medium lemon
- 1 tablespoon olive oil
- spring onions (opt.)
- Dice the cucumber, tomato, parsley and spring onions (opt.)
- Put into a bowl and season with salt and pepper.
- Pour over the juice of one lemon and the olive oil. Serve with Palestinian soup, other spicy dishes, rice or with warmed pita bread.
This is a popular Palestinian salad eaten a lot during the fasting month, Ramadan.
