Fattoush (Palestinian Traditional Salad)

  • 1 lebanese cucumber
  • 1 ripe tomato
  • 1/2 bunch parsley
  • salt and pepper
  • 1 medium lemon
  • 1 tablespoon olive oil
  • spring onions (opt.)


  1. Dice the cucumber, tomato, parsley and spring onions (opt.)
  2. Put into a bowl and season with salt and pepper.
  3. Pour over the juice of one lemon and the olive oil. Serve with Palestinian soup, other spicy dishes, rice or with warmed pita bread.

This is a popular Palestinian salad eaten a lot during the fasting month, Ramadan.
