Jill's Brown Rice Salad

- 1 cup brown rice
- finely chopped onion (slightly cooked)
- salted peanuts
- 1 teaspoon sugar, garlic, curry powder
- 1/2 cup vinegar
- 1/4 cup oil
- Cook brown rice. Add onion to soften while rice is just cooked.
- Add other diced ingredients except for peanuts and mix well.
- Mix together dressing ingredients.
- Pour dressing over salad. Lastly add peanuts.
