Margot's Apricot Loaf

  • 1 cup self raising flour
  • 1 cup wholemeal flour
  • 1/2 cup raw sugar
  • 1 cup coconut
  • 1 1/2 cups soy milk
  • 1 cup diced apricots and sultanas

    For the icing
  • 1 cup icing sugar
  • 1 tablespoon lemon juice
  • hot water to mix
  • coconut for sprinkling on top


  1. In a large bowl mix all of the cake ingredients together.
  2. Pour into a greased loaf tin.
  3. Bake in a 180 degree oven for about 45 minutes.
  4. When cool, ice with the icing and sprinkle on coconut.
