- 1 cup self raising flour
- 1 cup wholemeal flour
- 1/2 cup raw sugar
- 1 cup coconut
- 1 1/2 cups soy milk
- 1 cup diced apricots and sultanas
For the icing
- 1 cup icing sugar
- 1 tablespoon lemon juice
- hot water to mix
- coconut for sprinkling on top
- In a large bowl mix all of the cake ingredients together.
- Pour into a greased loaf tin.
- Bake in a 180 degree oven for about 45 minutes.
- When cool, ice with the icing and sprinkle on coconut.
