Pasta a la Benoit

Ingredients

Noodles:

  • enough pasta for two
  • water

Vegetables:

  • 1 zucchini
  • 1 carrot
  • 1/3 capsicum

Sauce:

  • 2T savoury yeast flakes (also known as "nutritional yeast")
  • 2T plain flour
  • 1t cornflour
  • 8 capers
  • 1T veg oil
  • 1-1&1/2 C water
  • 1/4t vegetable stock (+ extra salt if desired)
  • 1/2t oregano
  • 1/4t thyme

Method

  • Boil water and cook pasta noodles.
  • Chop vegetables and fry in pan with some olive oil.
  1. Put yeast flakes, flours, herbs and stock into small saucepan, add 1/2C of water and stir.
  2. Heat and add about another 1/4C water as the mixture thickens, repeat this process until all water is added.
  3. Add capers, oil and stir.

Put pasta into two bowls, add vegetables and pour on sauce. Add garnish if required. Voila! Instant yum.
