Ingredients
Noodles:
- enough pasta for two
- water
Vegetables:
- 1 zucchini
- 1 carrot
- 1/3 capsicum
Sauce:
- 2T savoury yeast flakes (also known as "nutritional yeast")
- 2T plain flour
- 1t cornflour
- 8 capers
- 1T veg oil
- 1-1&1/2 C water
- 1/4t vegetable stock (+ extra salt if desired)
- 1/2t oregano
- 1/4t thyme
Method
- Boil water and cook pasta noodles.
- Chop vegetables and fry in pan with some olive oil.
- Put yeast flakes, flours, herbs and stock into small saucepan, add 1/2C of water and stir.
- Heat and add about another 1/4C water as the mixture thickens, repeat this process until all water is added.
- Add capers, oil and stir.
Put pasta into two bowls, add vegetables and pour on sauce. Add garnish if required. Voila! Instant yum.
